My Favorite Salad

More on my Whole30 and a little knitting.

Questions asked at work.
So Anne, What are you eating?
I am eating Monkey Salad.

Monkey Salad

Shaved unsweetened coconut, cashews, banana = Bliss and a filling, nourishing addition to breakfast. This really gets me through the work day.

Newest benefit from eating my way through my Whole30.
I have had a tremor in my hands for years. It is almost gone.

Next benefit the energy to knit.
I finished these dang socks. I only had to do the kitchener.

It is to hot to wear wool socks in FL. so I hung them in the garden for the day. More on the garden later.

Those socks are yummy too. Maybe you will get a cold spell? They are too pretty to put away.

yum, that does sound good.
You know I am watching you do this, wondering how hard it would be to do in a houseful without support... But no cream OR sugar in my coffee for a month? I can do one or the other but to have neither... I would have to drink tea!

Judy, I thought I couldn't drink black coffee, but I am loving it. You could use almond milk Silk makes one with no added sugar. Coconut milk is also an option.
I enjoy 2 to 3 sock months on the Gulf Coast!
AnnMarie, just a small banana. Large pinch of coconut maybe 1 to 2 tbsp. about 8 to 10 cashews for one serving.
